Ranch Wife Pumpkin Bars
These pumpkin bars have been a fall favorite in our house for almost 20 years now. Any recipe that is this simple & makes the whole family happy always stays at the top of my list!
- 4 eggs, beaten
- 1 – 15 oz can pumpkin
- 1-1/3 cups sugar
- 1 cup vegetable oil
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon ginger or nutmeg
- 1 – 8 oz package cream cheese, softened
- 1/2 cup (1 stick) butter, softened
- 2 teaspoons vanilla
- 4 cups powdered sugar
Preheat oven to 350 degrees. Beat eggs, pumpkin, sugar, and oil until well blended. Add flour, baking powder, baking soda, salt, cinnamon, and ginger or nutmeg. Mix until smooth, and spread batter into an ungreased 12 X 18 jelly roll pan (for a cake version, use a 10 X 15 or 9 X 13 pan). Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Begin testing at 20 minutes, and for the smaller pan size, time may increase to 35 minutes. Allow to cool on a baking rack.
For the frosting, beat together the cream cheese, butter, and vanilla until light and fluffy. Add the powdered sugar, one cup at a time, beating well after each addition. Mix until smooth. Spread frosting over the bars, and enjoy!
