Rhubarb Dump Cake
About 15 years ago, the owner of a small local produce stand gave me this recipe as she stuffed my bag with all the rhubarb I’d take. Rhubarb, which is actually a vegetable, grows well in our Pacific Northwest climate, & there’s plenty of it to be found during this season. This dessert quickly became a favorite, & it’s just about the easiest, best tasting thing you’ll ever throw together in five minutes. Give it a try…you’ll be so glad you did!
Rhubarb Dump Cake
- 5-6 cups chopped rhubarb
- 1 small package red Jello
- 1 cup sugar
- 1 cup water
- 1 package dry cake mix
- 1/2 cup melted butter
- granola, nuts, or oatmeal for top
Spread rhubarb in the bottom of a greased 9X13 pan. Layer jello, sugar, water, dry cake mix and melted butter in the order listed, and do not mix. Top with granola, nuts, or oatmeal. Bake at 350 for 1 hour. For added flavor, squeeze juice from a fresh orange on top before serving. My favorite combo is raspberry Jello, yellow cake mix, and quick oats, chopped walnuts & pecans on top.
